  1. Preheat the oven to 175 degrees C (Gas Mark 4). Place the flour, onions and beef into a large resealable food bag.
  2. Add salt and pepper , seal bag and shake well so all of the meat and onions are lightly covered in flour.
  3. Heat the olive oil in a large frying pan over medium-high heat, and then add the contents of the bag into the pan to sear the meat. Next, pour in all of the beef stock and let simmer gently for a few minutes.
  4. Pour contents of the frying pan into a casserole dish. Place the potatoes in the casserole dish so half of the potato quarter is above the surface, half below.

Absolutely lovely. Served it with some roasted carrots.-14 Apr 2011

This was a doddle, the only thing i did wrong was added more salt before putting it in the oven, the salt from the stock was more than enough. I also added some Italian seasoning and made Jamie Olivers huge yorkshire puddings to compliment the dish-01 Oct 2012

I used a 474g pack of casserole steak, added some mushrooms and dried thyme to the 'bag', added some raw, sliced carrots after frying, and kept the potatoes out to roast. Apart from those tweaks, I followed the recipe to the letter - dead easy and delicious! Thanks - will def do again.-10 May 2014

This Vegetable Beef Casserole is an easy, healthy, and budget-friendly dish! Just what a big family needs. Layers of seasoned ground beef with potatoes, carrots, celery, green beans are topped with tomatoes and melted Cheddar cheese. This dish will easily feed a hungry family.

This simple ground beef and mixed vegetable casserole is a one-pot recipe that requires minimal preparation and hands-on time but delivers maximum flavor and nutrition. And it is so versatile, too. You can throw any veggies you want or have to hand. And frozen veggies are also great in this recipe. For me, it is hard to beat – delicious!

To make this Vegetable Beef Casserole, you will need the following ingredients:

Ingredients

  • 2 celery sticks, thickly sliced
  • 1 onion, chopped
  • 2 really big carrots, halved lengthways then very chunkily sliced
  • 5 bay leaves
  • 2 thyme sprigs, 1 whole and 1 leaves picked
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 2 tbsp plain flour
  • 2 tbsp tomato purée
  • 2 tbsp Worcestershire sauce
  • 2 beef stock cubes, crumbled
  • 850g stewing beef (featherblade or brisket works nicely), cut into nice large chunks

This easy ground beef & potato casserole is super creamy, and loaded with flavor. You’re definitely going to want to add this recipe to your dinner rotation!

I love cheap dinner recipes! Especially ground beef recipes, because my family loves almost anything with ground beef. One of their favorite dinner recipes would have to be my famous easy ground beef & potato casserole.. Or my cheesy hamburger casserole as the kids call it. This casserole is made with super cheap ingredients that can be purchased at any local grocery store.

I used regular russet potatoes, that I make sure to wash and scrub really well. I then slice the potatoes. I leave the skin on, however, you can certainly peel the potatoes if you choose.

The ground beef that I use for this ground beef casserole is usually whatever I can find on sale. Nothing fancy. It’s the 70/30 ground beef, and works perfectly.

This hamburger casserole is super easy to make, and goes great with mixed vegetables.

Heat half the oil in the pressure cooker over medium heat and lightly brown the onions until golden, then remove and set aside.

Add the remaining oil and brown the beef cubes in batches over medium-high heat. Return all the beef to the pan and sprinkle with flour. Cook, stirring, for about three minutes. Add the wine, garlic and the herbs and season well with salt and pepper. Close the lid and lock it, then bring the cooker to low pressure over high heat. Once low pressure has been reached, reduce the heat to stabilise pressure and cook for 20 minutes. Remove the cooker from the heat and release the pressure using the quick-release or cold-water release method.

Uncover, add the potatoes and quickly replace the lid, bringing the cooker back to low pressure over high heat.

Once low pressure has been reached, reduce the heat to stabilise pressure and cook for another 10 minutes. Remove the cooker from the heat again and release the pressure using the quick-release or cold-water release method. Uncover and add the browned onions, carrots and tomatoes. Quickly replace the lid, bringing the cooker back to low pressure over high heat. Once low pressure has been reached, reduce the heat to stabilise pressure and cook for another five minutes. Release the pressure using the natural-release method, remove the lid and check that everything is cooked and tender. Spoon the casserole into wide shallow bowls, scatter with parsley and follow with a green salad.

  • 2 sticks unsalted butter, chilled and cubed
  • 1/4 cup canola oil
  • 1 large Spanish onion, coarsely chopped
  • 1 1/2 pounds carrots, peeled and cut into 1/2-inch pieces
  • 1 1/2 pounds parsnips, peeled and cut into 1/2-inch pieces
  • Salt and freshly ground pepper
  • 3 pounds ground beef
  • 1 tablespoon chopped thyme
  • 1 tablespoon chopped rosemary
  • 4 1/4 cups self-rising flour
  • 5 1/3 cups milk
  • 2 cups chicken stock or low-sodium broth
  • One 10-ounce package frozen peas
  • 6 ounces sharp cheddar cheese, shredded (1 1/2 cups)

Preheat the oven to 450° and position a rack in the upper third. Line the bottom of the oven with foil to catch any drips.

In a large pot, melt 4 tablespoons of the butter in the oil. Add the onion, carrots and parsnips season with salt and pepper. Cover and cook over moderately high heat, stirring, until the vegetables are softened and lightly browned, 8 minutes. Add the beef, thyme and rosemary and cook over moderately high heat, breaking up the meat with a spoon, until no trace of pink remains and any liquid has evaporated, 10 minutes. Stir in 1/4 cup of the flour and cook for 2 minutes. Stir in 3 cups of the milk and the stock and simmer until thickened, 5 minutes. Stir in the peas and season with salt and pepper. Transfer the mixture to two 9-by-13-inch baking dishes.

Put the remaining 4 cups of flour in a large bowl. Cut in the remaining 1 1/2 sticks of butter until the mixture resembles coarse meal. Add the cheddar. Stir in the remaining 2 1/3 cups of milk until a smooth dough forms. Using a 2-tablespoon scoop, arrange 18 mounds of the biscuit dough on the filling in each baking dish.

Bake both potpies on the top rack of the oven for 40 minutes, until the filling is bubbling and the biscuits are cooked through. Turn on the broiler and broil for 1 minute or until the biscuits are golden. Let the potpies rest for 10 minutes before serving.
