Instead of topping a slice of bread with ham or smoked salmon and a sunny side up egg, for a change I sometimes use half of an avocado to make this gluten free low carb sandwich.

  1. Melt butter in a pan and cook the egg sunny side up. Season with salt and pepper.
  2. Cut ham into stripes and place on top of avocado half, then top with egg. Sprinkle with minced herbs if liked.

Avocado Bacon and Egg Sandwich

The BAM Sammy is one of my all time favorite sandwiches to get at a delicious restaurant in downtown Boise called Fork. I can’t tell you how many times we have eaten at Fork. Everything we have eaten there has been so good. But the BAM Sammy is my go to sandwich. The combination of maple marinated bacon, avocados, and fresh mozzarella (which forms the acronym BAM) is just heavenly. There are also tomatoes, fresh pesto, and I like to add the optional fried egg. The egg is a little extra, but totally worth it. We decided to re-create it at home and it turned out fantastic.

Half an avocado contains 3.4 grams of fiber. Eating meals high in fiber helps you feel full longer. Avocados are good for your heart and can help lower cholesterol. With all of these great reasons to eat avocados, I’ve been searching for an easy avocado recipe like avocado toast.

The only hard part of eating an avocado is getting the avocado out of the skin. Once you know what you’re doing, it’s really quite easy. Slice the avocado in half and then scoop out the seed in the center. Using the avocado slicer, remove the flesh of the avocado. Use it as slices or mash it in a bowl. For the lemon zest, I used a citrus zester. It is so much easier to get the zest of a lemon with a citrus zester than trying to use a knife.

  • 1 tablespoon butter, softened
  • 2 slices Italian bread
  • 1 ounce Swiss cheese, sliced

Heat olive oil in a skillet over medium heat. Crack eggs into skillet cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.

Spread butter onto 1 side of each bread slice.

Heat a skillet over medium heat. Lay bread slices in the hot skillet, butter-side down. Quickly layer Swiss cheese, 1 fried egg, Cheddar cheese, 1 fried egg, avocado, and remaining bread slice, butter-side up. Carefully flip sandwich to grill other side until golden brown, 3 to 4 minutes.

Remove sandwich from skillet and cut in half.

Preheat the oven to 375°. Place the English muffins on a rimmed baking sheet and top each bottom half with 1 slice of American cheese. Bake until the cheese melts, 2 to 3 minutes.

Meanwhile, in a large nonstick skillet, melt the butter. Add the eggs and cook over low heat, stirring, until curds begin to form, about 2 minutes. Season with salt and pepper and continue cooking until the eggs are just set, about 2 minutes longer. Spoon the eggs over the cheese and top with the avocado wedges. Garnish with scallions, close the sandwiches and serve.

One of the hidden perks of growing up around all of my aunts, uncles and cousins is that we always had fabulous food when my parents went out of town on vacation! Every Winter, my Aunt Paula and Uncle Randy would move in to our house for a week while my parents got away. Fried Egg Sandwich: the beginning

I love a good breakfast egg sandwich but anytime I’m out and about, my options are limited. This little breakfast treat is usually geared towards meat-based meals and so over the years, I’ve experimented with many different veg-heavy alternatives. Enter this avocado egg sandwich!

I’ve loaded this sandwich up with a hefty amount of vegetables, hummus, and a solid sauce to bring it all together. Not much is missing, making this my kind of breakfast.


-Bring eggs and water to a boil.
-Once water starts to boil set timer for 10 minutes.
-After 10 mins place eggs in bowl of cold water and ice cubes (cools them faster and makes them easier to peel).
-Remove egg shells place 1 whole egg and 2 egg whites into a bowl.
-Add avocado, mayo dressing, chives, and basil to bowl.
-Mash and mix ingredients with a fork to desired consistency. Add salt and pepper to taste, mix.
-Spoon egg salad onto 1 bread slice (I like to toast my bread).
-Top with tomato slice, romaine lettuce leaf, and 2nd slice of bread.
