Add the chocolate, honey and mix until smooth. Let cool completely.

Mix the egg whites with a pinch of salt, add 2 tablespoons of powdered sugar and mix until it becomes a glossy meringue.

Incorporate in the chocolate cream lightly, mixing with a spatula.

Add the rest of the mixed cream.

Counter-mix the egg whites with a pinch of salt, add the sugar and mix until it becomes a glossy meringue, add the yolks, mixing well after each one.

Add oil, water, essence and mix until incorporated.

Mix the flour with the cocoa, the baking powder and sift, mixing with a spatula with light movements.

I preferred to make a cake in the shape of numbers, and I divided the composition into 4 portions.

If we want to make a simple cake, we will bake the top in a rectangular tray lined with baking paper.

Because the sheets were thin, I didn't syrup the countertop, I filled the countertop with this cream and decorated it with fruit.


Banana Mousse Cake And Chocolate Icing

1. Prepare the cake top - put the sugar over the flour, baking powder, a teaspoonful of salt and cocoa powder and mix all the dry ingredients well.

2. Prepare the food processor or mixer in the bowl in which we put the 3 eggs, water, vanilla essence and oil and beat vigorously (we can also use a hand mixer).

3. Add a cup of the dry ingredients and mix for 1 minute. Add cup by cup the mixture of solid ingredients and beat for a minute, each time.

4. After we finish putting the dry ingredients, mix for another 2 minutes.

6. Prepare a cake tray with removable walls, in which we arrange baking paper and pour the dough for the countertop.

7. Put the tray in the oven heated to 220 degrees for about 30 minutes.

8. When the cake tray passes the toothpick test, take it out of the oven, let it cool for 10 minutes, unfold the baking paper, arrange it on a plate, then let it cool completely.

9. For the yogurt and banana mousse, sprinkle gelatin (10 g) on ​​top of the orange juice, mix and let it rehydrate for 10 minutes.

10. Prepare a blender in which we put the bananas, brown sugar and Greek yogurt and mix until we get a fine smoothie.

11. Put two tablespoons of hot water over the rehydrated gelatin and mix until the gelatin melts and you get a liquid, which you pour over the banana and yogurt smoothie. Then mix for 1-2 minutes.

12. Pour the yogurt and banana mousse over the cake top (completely cooled). Cover with cling film and refrigerate for 3-4 hours, until the mousse hardens.

13. For the icing, prepare a pan, in which we put the 200 g of dark chocolate for the icing and 150 ml of sour cream for the whipped cream.

14. Prepare the stove and leave the icing on low heat, stirring constantly, until the chocolate melts (it should not reach the boiling point). Close the stove and put the remaining 50 ml of whipped cream. Stir with a whisk, then let the icing cool until it reaches room temperature.

15. Remove the cake from the refrigerator, open the removable ring and remove the food foil.

16. Pour over the cake the cooled icing, but still liquid and garnish with oranges (or other fruits).


Banana cake and chocolate mousse!

METHOD OF PREPARATION:
1.Put the cold butter through the large grater. Add the flour and rub them until you get a sandy and dry dough. Then add the ground almonds and sugar, and at the end - the beaten egg.

2. Quickly knead the dough, shaping it into a ball. Even if you see that the dough is not homogeneous, you should not knead it too much - so, baking cup, it will not look "hard", but will be somewhat layered and crumbly.

3. Put the coke in the fridge for about 30 minutes. Then take it out, spread it out, put it in a tray and put it in the fridge again for 30 minutes. Meanwhile, preheat the oven to 200ºC.

4.Put the dough tray in the oven.

5.Prepare the chocolate mousse: put 50 ml of whipped cream and butter in a saucepan and bring to the boil.

6. Take the mixture off the heat, put the chocolate in it, which you have to melt, stirring intensely. You will get a homogeneous chocolate meal. Allow to cool to room temperature. Then beat the cream until it hardens.

7. Beat the cream cheese, powdered sugar and rum until smooth (you can use any cream cheese - the cake is very tasty with mascarpone or Philadelphia). Combine the chocolate and cheese compositions.

8. Pour the mixture obtained into the whipped cream (250 ml). Stir gently until smooth. Peel the bananas.

9. Assemble the cake: put a few tablespoons of mousse on the top and spread the bananas on its surface, in a spiral.

10.Pour the remaining cream on top. Even out the surface of the cake and decorate it as you wish - for example, with grated chocolate or leave a creative mess in waves on its surface. Refrigerate the cake for at least 3 hours or, preferably, overnight.

In a cup we put 100 ml of cold water in which we mix gelatin and let it swell for 10 minutes. Beat the cream with a drop of liquid cream and then put it in the fridge.
