The other day I saw the recipe on someone's page and I immediately decided to put it into practice because I had cauliflower in the fridge. I hope you like it as much as I do.

  • 1 medium-sized cauliflower
  • 1 clove of garlic
  • mayonnaise (I made it)

  • a teaspoon of oil

RECIPE PREPARATION Cauliflower salad:

Bring water to a boil with a pinch of salt and a few drops of oil. Meanwhile, wash the cauliflower and break it into small bunches. I usually leave the cauliflower between 10 and 15 minutes from the moment it started to boil depending on how big the bouquets are, because if it boils too much it loses its properties. Peel the garlic and cut it on along so that you can remove the middle part. Remove the cauliflower and put it in a bowl together with the garlic, a pinch of salt and mayonnaise. Mix everything with the blender until you get a thick paste. incredibly good. Good appetite.

Cauliflower salad

This salad is easy to prepare, with ingredients you can find in any Lidl store and lasts brilliantly in the fridge for a few days, in a hermetically sealed casserole.

We clean the cauliflower and unwrap it in small bunches. Boil the cauliflower bunches and the carrot sticks in salted water. Vegetables should be cooked so that they remain slightly crispy.

Drain the cauliflower and carrots well. I passed the hoof with the fork.

Add the diced carrot, finely chopped red onion, finely chopped dill, grated garlic. Add mayonnaise, yogurt, season to taste with salt and pepper. Depending on the taste, we can add lemon juice or a teaspoon of mustard. Good appetite!

INGREDIENT:

  • 300 g cauliflower
  • 1 tablespoon oatmeal
  • 2 cloves of garlic
  • 1 bell pepper
  • celery
  • 1 tablespoon lemon juice
  • 1 tablespoon flax seeds

METHOD OF PREPARATION:

1. Wash the cauliflower very well and give it raw through the food processor. Add the garlic cloves, oatmeal, celery (about the size of a walnut) and half the bell pepper. We mix very well, and because it will come out very thick we will put a little water.

2. Transfer the resulting mixture to a bowl. Finely chop the other half of the pepper and mix it with the cauliflower. Add lemon juice, flax seeds and salt to taste.

A very good salad, my husband told me to make more - he really liked it. Besides being simple to prepare, it is also very healthy. In the more dietary version you can replace sour cream with yogurt, so according to your preferences.

2 teaspoons green parsley (you can add a little green onion if you have)

How is it prepared?

The cauliflower is washed well and passed through a large grater.

Peel a squash, grate it and squeeze the juice.

Dice the tomatoes and small parsley, add to the cauliflower bowl.

Add the crushed garlic - be careful not to put more than 1 puppy of garlic, it will cover the taste of the other ingredients.

  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • freshly ground pepper
  • 1 tablespoon mayonnaise (50g)
  • 2 tablespoons Greek yogurt tip (100g)
  • 1 teaspoon curry powder
  • 1/2 teaspoon chili flakes
  • the juice of half a lemon
  • 1/4 teaspoon salt
  • 1 teaspoon cumin seeds, lightly crushed (you can also use cumin powder)
  • 3 eggs

Preheat the oven to 230 ° C with ventilation. If your oven does not have this function, you can set it to the highest temperature.

Cut the cauliflower into florets, wash it, then let it drain for a few minutes. With the help of a kitchen towel, try to dry the cauliflower as well as possible, to make sure that it will brown during baking.

Transfer the cauliflower to a tray lined with baking paper.

In a bowl add the olive oil, curry powder, salt and pepper. Mix well and transfer the sauce thus obtained over the cauliflower. Stir until all the florets are covered in sauce. Among the cauliflower, put the garlic cloves in the shell.

Put the tray in the oven for 15 minutes, or until the cauliflower is browned, but it has kept its crispy texture.

Meanwhile, place a medium-sized saucepan with water over high heat. When the water boils, carefully add the eggs and boil for 10 minutes.

When the eggs are ready, carefully drain the hot water and add cold water over them. This will stop the cooking process.

When the eggs have cooled and can be handled, peel them and place them in a large bowl.

When the cauliflower is ready, take it out of the oven and leave it to cool in the pan.

In another bowl add mayonnaise, yogurt, curry powder, chili flakes, lemon juice, salt and crushed cumin seeds.

Take the baked garlic from the pan, peel it, chop it finely and add it to the yogurt bowl. Mix everything until you get a dressing.

Using a fork, crush the eggs so that you are left with smaller pieces. Over the eggs add the cauliflower, and over the cauliflower, add the dressing and mix well.

Transfer the salad to a plate, sprinkle chopped parsley on top and place quarters of lemon in place for extra acidity.


Baked cauliflower salad with curry dressing, baked garlic and egg

This salad can go perfectly with any chicken or turkey recipe, but I can honestly say that we ate it as such and it was a delight. It's a not at all complicated recipe, bake the cauliflower, boil some eggs and mix a dressing and that's about it.

My advice is to drop a few drops of lemon on top of the whole thing at the end, that acidity will fit perfectly.
