Meatball soup with rice

I have a recipe for meatball soup with rice from my mother-in-law. She puts rice in the broth and they come out very tasty.

Ingredient:

  • 500 g minced meat
  • 150 g of rice
  • 1 carrot

  • 5-6 large tomatoes

How to prepare meatball soup with rice.

1. Cut the onion and pepper into cubes, put the carrot on a large grater and cook for 20 minutes.

2. Add the tomatoes on the large grater and let it boil once more.

3. Meanwhile, prepare the meatballs. Put the rice for 10 minutes in boiling water and let it simmer. Then mix 100 g of rice with the meat and the egg and mix well. I also added a little chopped parsley. We put the rest of the rice in the soup.

4. Form the meatballs that we put one by one in the boiling soup and let them boil for another 20-25 minutes. At the end add the larch and season with salt and lemon salt. Good appetite!


Meatball soup

a granulated soybean can
1/4 cup rice
2 tablespoons chopped spices (or a mixture of dried thyme, paprika, salt, pepper, garlic powder)
1/2 bunch parsley, finely chopped
a suitable onion, cut very finely

For the soup:

3 large onions
2 carrots
2 potatoes
1 parsnip
1 small celery root
100 g green beans
a few pieces of cauliflower
100 g peas
1 small zucchini
1/2 kg tomatoes / a can of tomatoes in broth
2-3 l of water
1 l borscht or lemon juice to taste
1 bunch of larch
2-3 tablespoons olive oil
salt pepper

Cut all the vegetables into small pieces.

In a pot put to boil in 2 liters of water, onions and green beans.

Let it boil for 5 minutes then add the rest of the vegetables.

Continue cooking for another 5-6 minutes then add the peeled and finely chopped tomatoes / canned tomatoes.

At the end add the borscht / lemon juice (if you will use lemon juice then fill it with water). Let it boil for a few minutes.

Add the finely chopped larch, olive oil, salt and pepper to taste.

Meatballs can be served with vegetable cream.

Quick cashew cream:

½ large cup of cashews, soaked in water for at least 2 hours
½ large cup of water
a tablespoon of lemon juice
a pinch of salt

Put all the ingredients in a blender and mix until you get a fine paste like the consistency of cream. Ready!

Ingredient:

For the soup:

I received a beautiful rooster from the country and I thought I could make nothing but a peasant soup. It can't be compared to the taste that country poultry meat leaves in the soup, so there was no point in complicating myself with other recipes.

I boiled them in a large pot of water.

I served hot pepper soup! It is excellent and without peppers, it is very healthy and tasty!


Meat soup without rice

Bring the meat broth to a boil in a pot. Keep 1-2 tablespoons of soup in a bowl.

Meanwhile, prepare the meatballs: mix in a bowl the minced meat, egg whites, salt, pepper and possibly psyllium bran. Leave it for a while, then take a little of the composition and shape the hairs.

MEATBALL SOUP
