It took:
Mix well the cottage cheese, salt, sugar, eggs and ½ from the amount of sana (whipped milk). Incorporate flour.
Separately, mix the other half of the bran (whipped milk) with baking soda and mix the two compositions. You need to get a dough with the consistency of a thinner cream. If necessary, thin with a little milk.

Heat a Teflon pan, add a little oil and let it heat well.
Pour one layer of dough, rotate the pan, give it a thicker pancake shape and let it cook over low heat.

When the edges start to turn golden, turn on the other side, put 1-2 teaspoons of the filling on half of the surface. Bend the dough in half (to get a semicircle) and continue to fry over low heat for another 5 minutes, turning halfway. Be careful not to break or the filling will come out because they are very tender.

Repeat until the dough and filling are finished.

Filling:
For the filling, mix the ingredients well.
Allow to cool slightly before serving.
They are just as good as hot and cold and keep fluffy and tender for several days.
I am "in love" with these Russian pancakes… so I prepare them quite often, with various fillings… They are soft, fluffy, keep well longer… they are just as good and cold… Try them at least once!

Russian pancakes

The dumplings are made to go with smoked fish fillets. Warm they are wonderful with sour cream and grated cheese, but they also go well with sweet syrups and jams. I recommend the raspberry jam and the green walnut jam. I go with saute carrots, or by green peas along with kale, or fried eggplant.

Ingredient: 30 grams of yeast, a teaspoon of sugar, 300 ml of milk, 300 grams of flour, a teaspoon of salt, 50 grams of butter, three eggs, oil for frying.

Preparation: put the unleavened yeast with a teaspoon of sugar and 5 tablespoons of warm milk. Leave the yeast to rise for 15 minutes at room temperature. Mix the yeast with the flour, add the salt, soft butter and warm milk and finally the eggs. Mix with the mixer for about five minutes, cover the dough with a napkin and let it rise for an hour, until it doubles in volume. Heat oil in a pan. Form the pies from 2-3 teaspoons of dough spread a little by hand and fry the breadcrumbs, one after the other, over low to medium heat, about 2 minutes, until they easily come off the bottom of the tray. Return and fry for another 1-2 minutes, until nicely browned.

  • 100 grams of fresh cottage cheese
  • 2 eggs
  • 3 tablespoons oats (approx. 30 gr) & # 8211 for a more crunchy texture, replace one tablespoon of oats with one of semolina
  • a pinch of salt

The rest is already a game. Add all the ingredients in the blender (and if you want, vanilla, cinnamon) and you will notice that a fairly thick composition is formed, it's good.

Heat a pan well, optionally you can add a drop of oil and then put a tablespoon of the composition and leave them until they bubble on top. Then you turn them over and fry them for another minute, maybe 2. They will come out quite small, which is good, they will fry nicely and evenly.

Mine fun or Chinese noodles

They have a natural sweetness from fresh cheese, so I usually serve them with Greek yogurt, fresh fruit and a little honey / maple syrup.

They have a high protein content from cheese and eggs, so you will notice that they are much more filling than regular pancakes.
