  • 1 (1.25kg) whole chicken
  • 1 lemon, cut into 4 wedges
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon freshly ground black pepper
  • 250ml chicken stock

  1. Insert lemon wedges inside the cavity of the chicken.
  2. Turn on a multi-functional pressure cooker (such as Instant Pot® and select Saute function. Mix olive oil, salt, garlic powder, paprika and pepper in a bowl. Rub top part of chicken with 1/2 of the spice mixture. Place the chicken (breast side down) and cook until crispy, 3 to 4 minutes.
  3. Rub remaining spice mixture on the bottom side of the chicken. Flip chicken over with tongs and cook for 1 minute more.
  4. Remove chicken from the pot. Place trivet inside the pot; place chicken back in the pot, breast side down on the trivet, and pour in chicken stock. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build. Release pressure using the natural-release method according to manufacturer's instructions, which can take between 10 to 40 minutes.

  • 1 tbsp Olive Oil
  • 3 Chicken Breasts
  • 1 Lemon Zested and Juiced
  • 5-6 Cloves Garlic
  • 1 tbsp Italian Seasoning
  • 1 tbsp Flour
  • 1 tbsp Butter
  • 1/4 tsp Pepper or more as per tolerance
  • Salt
  • 1 Cup Chicken Broth or Water
  • Fresh Herbs(Optional)
  • 2 tbsp Cream(Optional)


You can use Chicken Thighs instead of chicken breast.If doing so, increase the time of Pressure Cooking to 7 minutes instead.

Dairy Cream– You can omit this altogether but if you like creamier sauce, this would add a great body to the sauce.Also, you can substitute with cashew cream or coconut cream.Coconut cream though, will change the flavour profile considerably.


This chicken would go well with so many sides. I chose to serve it with some asparagus since it’s one of my favorite spring vegetables but broccoli, zucchini or cauliflower would be delicious as well.

How to make Lemon Chicken in the Instant Pot

1. Season the chicken, then brown it in olive oil on the Instant Pot’s “sauté” setting. I do it in two batches and cook it skin-side down first for about 3-4 minutes, flip and cook for another 1-2 minutes.

Once the chicken is browned (it doesn’t have to be cooked through yet!), remove it and set aside on a plate.

2. Cook the onion and garlic until softened and lightly browned, then add the chicken broth, lemon juice, herbs and seasoning and scrape any browned bits off the bottom of the pot.

3. Add the chicken to the instant pot, seal the lid and pressure cook – I do 7-8 minutes for small chicken thighs (4 thighs per pound) and 10-12 minutes for large chicken thighs (2 thighs per pound).

Once the pressure cooking time is up, switch off the instant pot and leave it alone to do a natural pressure release.

4. Once the lid is safe to open, remove the chicken and keep warm on a plate. Stir the cornstarch slurry into the sauce, then switch the instant pot to “sauté” and simmer, stirring constantly, until slightly thickened.

5. Finish the sauce with butter, then serve over the chicken!

Instant Pot Whole Chicken with Lemon and Garlic Ingredients:

  • Whole roasting chicken, internal pieces removed and patted dry
  • Olive oil
  • Chicken stock or water
  • Lemon
  • Garlic
  • Dried rosemary
  • Garlic powder
  • Fresh rosemary, if desired
  • Salt and black pepper, to taste

Instant Pot Whole Chicken with Lemon and Garlic Directions:

Pour the chicken stock or water into the electric pressure cooker. Add the trivet.

Place the garlic, lemon, and fresh rosemary in the chicken cavity (if using.) Pour the olive oil over the chicken and sprinkle with dry seasonings including salt and black pepper.

Place the chicken on the trivet inside your Instant Pot. Cover the Instant Pot and set the valve to sealing.

Program the Instant Pot using “manual” or “pressure cook” for 25 minutes. Remember that it will take time for the pot to come to pressure so it will take more than 25 minutes total to cook.

Once the chicken is finished cooking, allow the pressure to release naturally for 15 minutes and then quickly releasing the remaining pressure.

Test the chicken for doneness with an internal thermometer, checking the dark meat between the thigh and breast for a temperature of 165 degrees. If the chicken is not done, replace the lid and program the electric pressure cooker to cook for an additional 5 to 10 minutes.

If you’d like to brown the chicken skin, place an oven rack in the lower third of the oven and preheat the oven broiler during the last 5 minutes of the cooking time on the Instant Pot.

When the chicken is done, carefully remove the chicken from the electric pressure cooker and place it on a rimmed baking sheet. Place the chicken under the broiler for 5 to 8 minutes, watching carefully until the chicken is browned.

Remove the chicken from the oven and allow it to rest 10 minutes prior to slicing and serving.
